Apple Thyme Bread is an excellent recipe to utilize wonderful apples in the fall. Using thyme is an interesting twist and has a nice mild taste inside this bread.
I’ve been trying to stay pretty wheat-free these days, especially if the flour is genetically modified or comes from an unknown source. Unfortunately, its hard to know unless you grow it yourself, which isn’t always easy to do!
A type of flour I have been using quite often is quinoa. I will mix it with almond flour or brown rice flour, like I do in this apple thyme bread recipe. If you are using regular flour, get an organic, non-gmo brand if you can. I also use Jovial products, as they seem to sit well in my system even though they do often have wheat ingredients in them. Feel free to comment as to what type of flour works best for you!
Thyme Benefits
According to Indigo Herbs, thyme actually has healthy benefits. It is considered helpful as a cough suppressent and for respiratory health. Thyme is rich in plant phenols such as thymol and carvacrol which are powerfully anti-spasmodic, making them potent cough suppressants. The antibacterial and expectorant qualities of this herb thin the mucus that the cough is trying to expel, whilst gently healing and soothing the bronchial tract. As a result of the overwhelming research, Thyme oil is approved by Germany’s “Commission E” in the treatment of bronchitis, whooping cough and upper respiratory inflammation.
Aside from all of the that, it has digestive health properties! Also known as a carminative, Thyme helps to prevent the formation of gas in the gastrointestinal tract and supports the removal of excess gasses which helps to combat flatulence. Interesting, right? Now you can serve your guests something with thyme, and won’t have to worry about them feeling like they have “break wind” in your home (hopefully, anyway!)
There are many other benefits that this particular article lists. However, one I found especially interesting is the mood benefits. Consuming this herb regularly or diffusing the essential oil in an aromatherapy burner can promote feelings of relaxation and well-being.
If you have a favorite way to use thyme, do share! In this recipe, I used lemon-thyme that I grew in my garden. The regular thyme can be used as well and will probably make it a little more savory. However, the amount of thyme doesn’t stand out that much so feel free to play the amounts.

Apples too, aid in digestion. Some people find that apples are extremely helpful in the daily elimination! Some even say, that they like to use apples or apple juice in place of coffee in the morning to help them wake up. Other benefits, like maybe the lowering of cholesterol or high blood pressure may be surprising. According to Everyday Health, apples can actually be helpful to those with type 2 diabetes. In fact, it said, “apples’ soluble fiber can help slow the absorption of sugar into the bloodstream and may improve blood sugar levels, Mayo Clinic notes. Plus, per Mayo, a healthy diet that includes insoluble fiber can lower your odds of developing type 2 diabetes in the first place.” Now that is a little different information you might have heard concerning type 2 diabetes!
These ingredients could potentially have their own health benefits but I never thought of putting them together into this recipe. Let me know what you think! I like to bake this particular bread with my Pampered Chef Stoneware loaf pan.

Ingredients

1 cup of almond milk (substitute walnut milk or regular milk, depending on preference)
1 teaspoon of apple cider vinegar
2 cups of quinoa, almond or brown rice flour or a combination of all (all purpose if you are not concerned about keeping it gluten free)
½ teaspoon of baking powder
½ teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of ginger (if using fresh ginger, I would use a full teaspoon)
½ cup of maple syrup
¼ cup of apple puree (one apple chopped or blended)
¼ cup oil (you could use refined coconut oil, or olive oil if you keep the temperature under 350)
1 teaspoon vanilla
1 ½ cups diced apples
2 tablespoons fresh thyme
Instructions
Turn the oven to 350ºF and grease your favorite bread pan.
Measure the cup of milk and add the teaspoon of vinegar. Leave aside.
In a large bowl, mix flour, baking powder, salt, baking soda, and cinnamon.
Then, add the milk with the vinegar, the apple puree, the maple syrup, the oil, and the vanilla.
Mix well and put the diced apple and thyme. Divide the mixture on the tray and bake for 40-45 minutes.
