Healthy Onion Cracker Bread
Back in the day, I used to make a healthy onion cracker bread recipe found in the book RAWvolution, by Matt Amsden. He calls it his famous onion bread. It really didn’t feel like a “bread” to me. In any case, the recipe was amazing and super versatile. Although I do not completely follow a “raw diet” anymore, it’s raw food basics are definitely part of my journey in making simpler and healthier foods. This recipe is a part of that! I made some modifications in that I like to add a variety of herbs or seeds to change it up. However, the basics of his recipe (onions and flax) still work.
The flax seed is amazing in how it holds the cracker together. Flax seeds have been regarded as a beneficial source of omega-3 fatty acids. This information comes with some controversy, so many resources recommend that it be NOT your only source of omegas. This article recommends around 2 tablespoons per day. It might be a good idea to read the article for yourself to determine how much is right for you. For this recipe, flax seed sure works well with the flavors used in this recipe!
You can use this recipe for healthy onion cracker bread to eat with soup, for salad toppings, on your favorite burger or those awesome crunchy toppings on the top of green bean casserole. Sometimes, as in my case, you may just love onions and want to create a savory snack that is delightful and still healthy. Well, you’ve come to the right place!
Ingredients (organic when possible)
1 + 1/2 medium to large onion (preferably sweet onion, but any will do)
1/2 c flax seed (either whole seed or ground seed will work)
1/3 c hemp seed
1/4 c of nama shoyu
1/4 c of olive oil
parsley (optional)
Instructions
- In a food processor, cut the onion with a slicing disc.
- Put the sliced onions in a mixing bowl with the rest of the ingredients.
- Mix thoroughly.
- Spread onion mixture on to Texflex dehydrator tray or other type of material that is dehydrator safe without letting anything fall through the holes.
- Dehydrate at 105 degrees for 15 hours.
- Flip in the mixture and cut into smaller pieces.
- Dehydrate for 6 more hours or until desired crispness. Cut into squares and enjoy!
