Simple Quiche Recipe
A friend shared the basic ingredients of this simple quiche recipe with me, about 30 years ago. Since then, I added a few items and herbs to change it up. The basics of eggs, tomatoes, zucchini and onions are such a classic combination. Using a regular or gluten-free frozen crust is a simple meal for sure. If you’d like to make a crust from scratch, this recipe will be even better. Alternatively, if you’d like to use a premix pie crust to help you get started, you could try this.
I like to use glass pie plates. The pie plates with the frozen crusts will work just fine. However, according the “AI” generated answer, “that cooking in uncoated aluminum will cause the metal to leach into food, and the amount of aluminum that leaches into food depends on the food and how long it spends in the pan. If you are concerned, you may wish to cook in aluminum that’s been anodized or clad in a non-reactive material.” In my opinion, I’d say it’s best to bake on your own glass, stoneware or stainless pans whenever possible. Feel free to research this more.
I often will bake on parchment paper (this one is compostable!), if I am in a situation where I need to use aluminum. For example, cooking vegetables on a grill could be wrapped in parchment first before tin foil. Ultimately what that means, is if I buy frozen pie crusts, I have to remove the unbaked pie crust. Believe me, this is no easy task.
Ingredients
This recipe makes 4 pies. It’s a bit time consuming to prep, but worth it!
4 pie crusts Use this recipe for crust, if you do not already have a premade crust. Try this crust for Keto/gluten free!
1-2 large onions
2 cloves of garlic
5-6 tomatoes, cut into bigger chunks
2-3 small zucchini, chopped
2 big tablespoons basil or double that if fresh (chopped)
salt – start with 1 tsp
about a cup of fresh broccoli, broken into small pieces
2 tablespoons parsley (if fresh, double it!), chopped if fresh
2 tablespoons of thyme; double that if it is fresh
1 tablespoon of oregano ; double that if it is fresh
8 eggs
2 cups of light cream or milk (milk of any kind, but cream tastes the best!)
about a cup or more of shredded cheese (farmers cheese or cheddar are common choices for our household)
keep it vegetable or add 1 lb of chicken or ground turkey
Instructions
1. If using meat, prepare it before you start assembling the ingredients for the quiche. Brown the hamburger, cook the chicken or ground turkey. Set aside.
2. Saute onions for a couple of minutes (onions turn translucent).
3. Add garlic, tomatoes, zucchini and broccoli.
4. Add rest of herbs on the top.
5. Simmer for 10 minutes. Turn of stover burner and allow to cool for a few minutes while you prepare the crusts.
6. Preheat oven to 400 degrees
7. Brush the bottom of each crust with egg and bake crusts for 6 minutes (if frozen pie crusts are purchased).
8. Divide simmered vegetables into prepared crusts.
9. Add cheese and herbs, salt and pepper as desired.
10. Add egg mixture and place into 350 degree oven for 1 hour. (Use 325 degrees with glass pie plate).
11. Allow to cool for 10 minutes.
12. Enjoy!
