Small Batch of Gluten-Free Chocolate Chip Cookie Recipe
My plan was to create more healthy recipes before the holidays kicked in full force…instead I needed to create a small batch gluten-free chocolate chip cookie recipe instead!
Because of great deal with Azure Standard, I was able to purchase a large bag of Bob’s Red Mill Gluten free flour. On this giant bag I bought (25 lbs), was this wonderful chocolate chip recipe. Understandably, I needed to pare down the recipe. Otherwise, I would still be eating those cookies! They are so delicious and believe me, I would love to make a huge batch BUT, they really don’t stay fresh too long. Thank the Lord!
I wish I could say that these cookies are “healthy” but truthfully they are just a comfort food and may be a little friendlier to those who cannot tolerate wheat or gluten. Some of these links are linked to more healthy ingredients, as this is how I like to try to make these cookies.
Ingredients
1-1/4 c Bob’s Red Mill Flour
half tsp baking soda
1/2 tsp real salt
half cup butter softened
1/2 c sugar
1/2 c of packed brown sugar
half tsp vanilla
1 egg (pastured or free range if possible)
1/2 c of chocolate chips or coconut sugar chocolate chips
1/4 c nuts (optional)
Instructions
1. Preheat oven to 350 degrees.
2. Mix butter, egg and rest of wet ingredients with an electric mixer.
3. Mix dry ingredients in another bowl.
4. Bring both bowls together and add the chocolate chips.
5. Spoon onto baking sheet or parchment.
6. Bake for 10-12 minutes. Allow to cool. Usually makes about 15 cookies.
