This pico de gallo recipe is a delicious and easy salsa-like delight! Personally, I prefer this simple recipe over canned or jarred salsa any day. It is so fresh and an absolute necessity for a simple snack. You’ll need only a few ingredients to make this classic Mexican blend and you don’t have to cook it. The basics are tomato, onion, cilantro, jalapeño, mango and lime. It is so easy to customize to add other ingredients such as herbs or foraged greens. Recipe yields about 4 cups (about 8 servings).

It takes a little planning to grow cilantro so that it doesn’t go to seed before you use it in this delicious recipe. It is pretty available at farmers markets and at the store, but super fun if you can grow all the ingredients yourself. The mangoes and the lemon or limes aren’t easy for me where I live, but still essential in the salsa. Additional meat, vegetable combo paired with homemade tortillas and guacamole and I’d say you are all set! Some day I’ll blog about more about the complete meal, but for now, enjoy this recipe!

How to make my simple recipe for Pico De Gallo

3-4 chopped tomatoes and/or 1 cup of fermented tomatoes for an extra gut boost
1 mango, peeled and cut into small chunks
1/8 of a jalapeño, or however much you’d like!
a handful of cilantro
1 clove of Garlic
3 green onions chopped
a tsp sea salt
lemon or lime juice
optional: one Tablespoon or 2 of fermented juice from any fermented vegetable (see blog here)

another optional: Corn, other types of peppers

Chop tomatoes (I like it in small pieces).

Peel and chop mango.

Chop up cilantro, onions and garlic.

Alternatively you could rough chop all ingredients and put into a food processor for a few pulses. If you do this, I would recommend putting the garlic, pepper and a tomatoes in the processor first to blend more fine before adding the other ingredients.

Add lemon or lime to taste along with salt.
