Make a Spring Roll
Make a spring roll anytime of the year! My favorite time to make these simple, beautiful spring rolls is actually in the fall. The reason is, because of the lovely greens and flowers! In this particular recipe I use Nasturtiums and Marigolds. Both are flowers that are organic and edible. I know this because, I bought them from High Mowing Organic Seeds Company. Start out by finding a nice flat, shallow bowl and put warm water into it. It isn’t an exact science as far as the temperature, but I found that only slightly warmed is better than too hot. If I warmed it too hot, the rice paper is more difficult to work with.
The fun part is adding the ingredients. You can make a spring roll with any mixture of ingredients. Feel free to add chicken or shrimp if that is the flavor profile you like. You may put a sauce inside the wrap, but I found that it is more difficult as the paper acquires more moisture. Keep it simple and you can always dip more as you eat.
I also included ingredients that I grew in my gardens, such as chickweed, kale, onions, chives and basil to make spring rolls. It’s a great opportunity to get creative! My technique is probably a little less polished but working the process is a lot of fun.
The rice papers I use, are from Star Anise Foods, and are easy to work with. Image show soy sauce, but also see the recipe below for an amazing sauce that takes it to another level. Sometimes I like to use a couple of different dips. My ranch dressing recipe tastes great with this too! That way, you can experiment with the spice level as well as the flavors.

Ingredients
Spring Rolls:
greens or lettuce from the garden
colorful edible flowers
onions
carrots
cucumbers
your favorite protein (chicken or shrimp)
Sauce
organic low sodium soy sauce
(you can stop here)
or THIS:
3 Tbsp of almond butter; somewhat think and mixable
1 tsp of sriracha
1 Tbsp soy sauce
lime juice or lemon juice
Instructions
1. Fill a shallow bowl with warm water (not too hot, maybe 80-90 degrees. Not exact. Just dip, do not soak.
2. Lay flat on a smooth surface that you can easily pick up edges. Your best tool here, is your hands!
3. Place all fresh ingredients in the center of the paper, an pull up on bottom and top edges, and left and right sides. It will be a little stretchy. Takes a little practice but it is fun and easy. Keep top and bottom open if you want it to look like sushi. Or, wrap in any shape you want!
4. Prepare sauce by mixing ingredients and pouring into a small cup. Alternatively, you can use your favorite dressing or just soy sauce.
5. Call some friends over, dip and enjoy!
